Mundelein, a suburb of Chicago. Our brewpub is a neighborhood
institution where friends and families can meet up and
enjoy great music, wonderful company, and the best beer in town.
Since we opened our doors in 2011, we have poured our heart and soul
into every glass. Stop in and taste what we're talking about!
We’re proud to be one of Chicagoland’s first craft breweries, firing up our first batch of Paddy Pale Ale back in 1996.
We chose the name Wild Onion in honor of the origins of Chicago’s name. “Che-cau-gua” was the phrase the original inhabitants of the region, the Potawatomi, used to describe the wild onions that grew throughout the area’s wetlands near the shores of Lake Michigan. We loved the imagery of the early French Canadian fur traders paddling their canoes down the Chicago River, surrounded by the distinctly aromatic wild onions as they approached the “big lake”. |Specializing in German-style beers, mostly lagers. Chicagoans all the way; we make the beer we like to drink. Period. Lagers are the perfect vehicles for our favorite toasty, bready malts and bright, earthy hops. We work hard to showcase a variety of lagers, from a delicate, traditional Kölsch-style beer to a robust, jet-black Schwarzbier. Goofy, yet determined; scrappy, yet reliable; passionate, yet precise, count on Metro to deliver solid, dialed-in beers brewed solely to make people happy.|
|At some point John and Dave were born. They did other stuff for a while and then they figured out they were better at making beer than at the other stuff. So that's what they do now. They met while both studied at the oldest and most respected brewing school (of the two...and by the brewers that went to the one) in the US, the Siebel Institute, in 2008 and the brewery was envisioned while they both interned at Metropolitan Brewing afterwards. Most of Off Color's business plan is based off of Doug and Tracy at Metro knowing what they're doing, so you should go buy some of their beer too. After cutting their teeth at larger breweries, the two somehow convinced enough otherwise-very-smart-people to invest enough money for them to buy some big shiny things to make their own beer in. So that's what they do now.|
